摘要:以粉碎的金銀花為原料,采用水浴浸提法對金銀花浸提。浸提的工藝條件為:1:40的料液比,在80℃水浴中,每次浸提20min。以乳酸菌發酵金銀花,分別采用了Fenton反應,TBA法和鐵氰化鉀還原法研究了乳酸菌發酵金銀花的羥基自由基清除能力、抑制脂質氧化能力以及還原能力。接種量為0.5ml、1ml、2ml、4ml、6ml,隨著接種量的變化,羥基自由基清除能力,抑制脂質氧化能力以及還原能力不斷變化,在接種量為4ml時抗氧化性最好。發酵溫度為38℃、40℃、42℃、44℃,在發酵溫度為42℃時,抗氧化活性最好。發酵時間為3h、6h、9h、12h,隨著發酵時間的變化,在發酵時間為12h時抗氧化活性最好。 關鍵詞:金銀花;水浴浸提;乳酸發酵;抗氧化活性
