摘要

　　　昆蟲是目前地球上尚未被充分開發利用的最大的生物資源寶庫，而且它的食物轉換率高，繁殖速度快，蛋白質含量高，其中確定可食用的達3650余種。昆蟲類食品以其味道鮮美、高蛋白、低脂肪、低熱量、多維生素、多微量元素等特點深受人們喜愛，具有非常誘人的開發前景。

　　　隨著我國經濟迅速發展，人民生活水平提高，對優質動物蛋白質的需求量愈來愈大，畜禽生產亦必須相應迅速發展。但由于蛋白質資源相當缺乏，影響畜牧業的發展。因此，目前許多國家將人工飼養昆蟲作為解決蛋白質飼料來源的主攻方向。黃粉的開發即是突出代表之一：一方面可以直接為人類提供蛋白，一方面作為蛋白飼料利用。

　　　本課題即研究黃粉蟲的養殖及其應用，蟲體的所含的成分及有效成分及其利用，如何提取黃粉蟲體內有效成分，例如脂肪、甲殼素等、蛋白的利用與加工等。
